Please edit page on which you want to change header style after title and content section you found a dropdown with name header style you can change header style from this dropdown.For inner pages like blog detail etc you can change header on these pages from theme options.

From admin panel go to the theme options > header settings .. Here you found 6 header images click on that image on which you want to change content after clicking on header image relevant field options change.
e.g when you click on second header image you shown different filed options then header one options. Also we share a link please download video from this link and watch in which we show how to change header content.
Also i suggest you almost all options available in theme options spend time and check hopefully you found your solution.
